It is an author’s wine, stepping outside the official appellations, the fruit of the free-thinking of a wine artisan. Étoile is an invitation to discover the essence of the Domaines Ott⋆ identity through three unique characteristics: the salinity of Clos Mireille, the smooth elegance of Château de Selle, and the depth of Château Romassan. Bespoke ageing in stainless steel vats and spherical ceramic containers brings out the fresh, crisp fruit with a slightly saline character.
