The grapes for the Bourgogne Rouge come from the 45 year old vines planted in clay and limestone soils, situated on the regional appellation area on the Côte de Beaune. Fermented in stainless steel, thermo-regulated tanks, the alcoholic fermentation begins with natural yeasts from the grape berries for 3 weeks. Pumping-over (the must) very softly in order to get the purest and most representative wine of the terroir we can have. The wine is then put into 500 liter French oak casks for further aging for 10 months. The wine is then blended and bottled according to the lunar calendar ("fruit day”)."Vincent Girardin
