The grapes are handpicked and sorted during the process. They are pressed slowly before being transferred to barrels immediately where they undergo fermentation that can last, depending on the barrel, for up to 3 months due to the action of the indigenous yeasts. Barrel ageing (20% new oak) on fine lees for 16 months. Gorgeous pale yellow colour. Highly expressive floral nose (white blossoms) with mineral (gunflint, flint) and lemony notes.
