THE STORY:
Yellowstone's journey began in 1872, a time when America's frontiers were still being charted and the national park had just been established. The brand was founded by J.B. Dant, son of the pioneering distiller J.W. Dant, and D.H. Taylor, at a distillery in Gethsemane, Kentucky, and quickly gained popularity, riding the wave of America's growing fascination with the West. Throughout the late 19th and early 20th centuries, Yellowstone changed hands several times, weathering the storms of Prohibition and shifting consumer tastes. In the 1960s, the brand found a home with Glenmore Distilleries, where it continued to be a staple in Kentucky and beyond. The modern era of Yellowstone — that began in 2010, when Paul and Steve Beam, descendants of the famous Beam and Dant families, acquired the brand through their Limestone Branch Distillery. This marked a return to family ownership and a renewed focus on craft. Stephen Beam has made it a point of operational emphasis to embrace new ideas, new practices. The distillery has adopted sustainable practices, including using locally grown white corn and implementing water recycling programs, and Beam, ever the tinkerer, has explored the various profiles and colorations to be had from different barrel finishes and blend compositions.
OUR TASTING NOTES:
The nose hits you straightaway with strong whiffs of vanilla oak right up front, with, just behind them, hints of lively, bright citrus. Tip back the glass, and the richness begins ... There’s a decided caramel presence here, backed by vanilla and toffee notes that add depth and definition. What really impressed me most, though, were the stone fruit accents (peach and apricot) that poke through, lending a floral character and light sweetness and giving you the sense that the experience you thought you understood is changing and evolving. The finish is where this bourbon shows its breeding: the charred oak provides structure, while the honey sweetness rounds everything out, with hints of cherry and cinnamon adding a final touch of intrigue.

RECOMMENDED USE:
You can absolutely enjoy it neat, and revel in its complex and nuanced character, but we think it also makes a fantastic base for a classic Manhattan, Old Fashioned, or Boulevardier.
FUN FACT:
Stephen Beam might be the most dynastic figure in all of the bourbon world: he's a direct descendant of Jacob Beam (of Jim Beam fame) on his father's side, and of J.W. Dant on his mother's side. Kind of like being related to both the Kennedys and the Rockefellers, only with more corn and, probably, better storytelling.
