OUR TASTING NOTES:
At first nosing, you’re on to something wonderful: a mineral note that cuts through the burst of red fruits, and that tells you that that famed limestone aquifer water is most assuredly a building block of this bourbon. There's also, and intriguingly, a hint of white chocolate in here, creamy but not cloying, along with a touch of stone fruits. Given this aromatic profile, you’re not entirely prepared for the depth and concentration of the palate, which takes you from the rich and fruity (blackberry jam mixed with citrus peel) to the stewed and almost savory (cinnamon apples and raisins) to the sweet and faintly smoky (a touch of toffee). But this suggests something episodic, when the truth is that the experience is anything but: those ten years at altitude have made for a beautiful integration of elements. The finish stretches out like a warm slice of fruit pie … if that pie had a good amount of oak and spice and citrus.
BACKGROUND ON THE BOTTLING:
This bottling honors both the 12,610-foot peak towering over Jackson Lake and artist Thomas Moran, whose landscape paintings inspired conservation efforts across the American West. Co-founder David DeFazio has declared this release "personal to us," given the company's founding "in the shadow of these mountains."
THE STORY:
We tend to remember, and lionize, the business ideas that in retrospect seemed inevitable from the start. But this one … this one was born from the worst possible beginning. Brad and Kate Mead were ranchers living a quiet life off the land in Wyoming when they decided one day to buy a Vendome still. That experience didn’t pan out, and they promptly began hunting about for someone with experience, first David DeFazio and then, later, Steve Nally, who had run wheated production at Maker's Mark for more than three decades. Nally was enjoying a well-earned retirement when these Wyoming upstarts talked him into one more rodeo. Nally laid the foundation, but the Meads and DeFazio weren't done collecting talent. Next they added Nancy Fraley, an industry lifer whose judgment is so revered she is known far and wide in the industry as “The Nose.” Almost overnight, the company went from a maker of promising spirits to one with a real trajectory.
THE METHOD:
Wyoming Whiskey's approach centers on using locally-sourced, non-GMO grain from the Big Horn Basin and water from a mile-deep limestone aquifer. Also critical are the company’s seven rickhouses, high up in the mountains, where the extremes of Wyoming cold and heat help to accelerate the aging process.

At 110 proof, this bourbon works beautifully neat or with a drop of water or ice to bring forth its subtler notes.

When Brad and Kate Mead first fired up their Vendome still with partner David DeFazio, they produced a failure so epic and awful that it seemed they might bail on the venture and go back to ranching exclusively. Fortunately for them, and for us, too, they didn’t give up, but returned to the task with determination … and new, uh, information.
