WhistlePig's Snout to Tail is as audacious as anything else this brash bourbon specialist has come up with.
Most obviously the 3 liter format, a first for them, and a walloping statement of a bottling.
What the 3-liter format means, beyond just giving you a lot of bourbon to have on hand, is that pouring becomes a kind of performance art at parties and gatherings.
This is not a bottle that disappears into the crowd. It’s impossible not to talk about, and marvel at. Smaller formats simply can't match this — let’s call it — presence in the room.
But that’s only part of the boldness of this beautifully matured 10-year, which was aged through a process that only WhistlePig would think to conceive. The brand calls it their "snout to tail" toasting method — essentially, a two-part aging process. The bourbon begins life absorbing characteristics from one Vermont oak barrel head, then gets flipped 180 degrees to finish with an entirely different Vermont oak #2 head.
I like to think of it as giving the bourbon an education, then sending it to finishing school.
The result is a refinement you don’t often come across. Honey and brown sugar hit the palate first, followed by a sustained note of toasted cashew that brings a wonderful, nutty richness. Then roasted almond and baked cornbread take over, before giving ground to butterscotch and fresh wheat. The finish is fascinating and almost savory, with a lingering touch of cedar.
