OUR TASTING NOTES:
The first surprise is the unexpected gentleness on the initial sip, with none of that agave burn that we brace for, and a one-two of maple and vanilla that doesn’t vie for supremacy with the lowlands mineral character, but works with it, enhancing and deepening it. Those 414 days in sherry casks make for layers that unfold slowly … and then unfold some more. What surprised me most was not just how the volcanic terroir comes through, but the way it does: in an earthy undertone that seems to give the entire experience a foundation that feels rooted in something ancient. The texture feels almost Cognac-like, silky in ways that make you realize that Moët Hennessy has contributed more than just a name. A massive triumph, and a tequila you’ll be thinking about for years after.
THE STORY:
The Gallardo family has been living around the Tequila Volcano since 1774, when they founded Hacienda La Gavilana … back when most of what would become the United States was still British America. For nearly 250 years, they've run various businesses in the shadow of that massive stratovolcano, including sugar mills, but their partnership with Moët Hennessy in 2017 is surely their most ambitious project yet. Together the two have built a dramatic distillery, one carved directly from volcanic rock. This is a literal underground cathedral to agave, where traditional tahona wheels (volcanic stone circles) crush the cooked hearts of lowlands agave plants.
WHAT TO PAIR IT WITH:
The richness and complexity of this tequila invites pairings, and you can probably guess the kinds of dishes I’m going to suggest: hearty, and full of depth, with flavors that are filled with umami: aged, ripe cheeses, slow-braised short ribs, carnitas, a dark chocolate mousse. You’ll want to avoid citrus or any acidic sauces that prevent the tequila from expressing itself fully.
