OUR TASTING NOTES:
The nose immediately announces its highland pedigree: there's a sweetness and herbaceous complexity that you can really only get when you source agave from high elevation (in this instance, nearly 7,000 feet). The seven years of aging reveals itself in stages: first, the bourbon barrel influence with vanilla and caramel depth, then the French oak finish that brings layers of spice and sophistication. The double-distillation in copper pot stills has made for a tequila of remarkable purity — every sip tastes clean and focused, and, at the same time (and this is the small miracle here) so rich and complex. The finish lingers with the kind of elegance that makes you understand why collectors go a-hunting for Volans.

THE STORY:
The Volans story begins not in the highlands of Jalisco, but in Los Angeles in 2004, when the Allens, Cristina and Chad, met while working in the music industry. She brought the heritage of Guadalajara (her father was an agronomist deeply connected to agave cultivation), he brought the ranching traditions of Idaho's Three-Rivers Ranch, where his family had worked the land for four generations. By their 2007 marriage, they'd become passionate advocates for premium tequila, making regular pilgrimages to Guadalajara for extensive tastings with family. Appreciation soon evolved into obsession, and thus was a new brand born. Working from El Pandillo Distillery, in Jalisco, they harvest rainwater alongside deep well and natural spring sources, blending these waters with agave honeys in a process that they have described as being akin more to alchemy than to production. The estate-grown agaves get crushed by "Felipestein" — their witty little nod to a 19,000-pound modern tahona that pays homage to traditional methods.

THE METHOD:
Production begins at 6,880 feet above sea level, with hand-selected, estate-grown blue weber agave that develops intense sweetness and herbaceous character in the highland climate. This proprietary dual steam system ensures even roasting for 22 hours (at precisely 94 degrees, Volans notes) followed by 24-36 hours of cooling. Open-air fermentation in stainless steel tanks allows natural yeast, passed down through many generations of the Camarena family, to work its mysterious magic. Next comes double-distillation in copper pot stills, before the long aging begins: six years in American white oak bourbon barrels, then an additional year in French oak.

42.3% (84.6 proof).

Volans is named for a constellation, one known as the Flying Fish — the Allens’s allusion to Chad’s family’s fly fishing heritage.
