WHAT THEY’RE SAYING:
White wine, as you know, is often scandalously slighted by the critics, which just makes the high praise from the critics for the two Grands Crus that much more exceptional, and that much more significant. Decanter awarded 96 points to Les Preuses 2023, lauding its “swirling aromatic complexity,” “chalky minerality,” and “lovely concentration” — an “undeniably delicious” wine that “has it all.” Vinous was no less enthusiastic about Les Clos 2023: a “complex” wine, it wrote, in a glowing, 95-point review, that “coheres beautifully in the glass” and delivers a "very saline finish [that] gets the saliva flowing."
THE STORY:
Here's what separates the truly great winemakers from the merely competent ones: they understand that ego is the enemy of excellence. Vincent Dauvissat has spent his entire career putting his wines first, even, yes, above his own reputation. If that approach has cost him some of the flashy press attention that lesser producers have received, Dauvissat can rest secure knowing that he's earned something far more valuable: the quiet reverence of France's most discerning restaurateurs and sommeliers. This is precisely the kind of self-effacing mastery that drives wine geeks wild with desire … and turns wine lovers into wine collectors. While other producers chase trends and court critics, Dauvissat simply continues doing what his family has done since 1931: farming organically without fanfare, harvesting by hand, and allowing his extraordinary vineyards to speak for themselves through wines of crystalline purity. The irony, of course, is that this commitment to anonymity has made Dauvissat's wines among the most sought-after in Burgundy. France's top restaurants snap up his production, leaving precious little for export. Which is why this offer is the equivalent of coming upon buried treasure.
OUR TASTING NOTES:
In an era of fruit-forwardness in wine, Dauvissat clings to its time-tested methods: its 2023s stand as a masterclass in what Chablis (and white wine by extension) ought to be. These wines combine power with restraint, richness with tension, and immediate pleasure with decades of aging potential. Above all, they possess that elusive quality that separates great Chablis from mere Chardonnay: a taut, mineral-driven backbone that seems to channel the ancient seabed beneath Chablis's famous Kimmeridgian soils. The Petit Chablis and village Chablis offer remarkable complexity for their appellations, displaying the kind of precision and length that we would typically associate with Premier Cru wines. The 1er Cru la Forest continues its reputation as the "secret grand cru," combining honeyed richness with profound minerality. Vaillons shows, once again, its characteristic elegance and finesse. The Grand Crus are, quite simply, transcendent experiences that have to be experienced (but of course can only be happened upon once): les Clos with its muscular depth and endless finish; les Preuses, with its ethereal delicacy and razor-sharp precision.
WHAT TO PAIR THEM WITH:
So many delicacies leap to mind, but above all: a goat cheese soufflé; oysters on the halfshell; a scallop carpaccio; a grilled trout or branzino; and a roast chicken with herbs de Provence.
FUN FACT:
Before dedicating his life to winemaking, Vincent Dauvissat seriously considered becoming a shepherd, a career path that would have been agriculture's loss and gastronomy's tragedy. Fortunately for all of us, the call of the vineyard was greater than the call of the pasture.
