The Macallan’s new TIME:SPACE Sherry Cask is out today, and it's an historic marker of a whisky, besides being a distinct and delicious one: for the first time in two centuries, it’s the only bottling ever matured and finished in casks that were seasoned with their own sherry rather than someone else’s. Add in the 20 years it was left to sit in cask and integrate, and you have a grand (and wonderful) indulgence of a single malt.
THE BACKGROUND:
The Macallan now owns Valdespino, the grande dame sherry house in Jerez. And that fact, coupled with the fact that this was given a full maturation in fresh sherry oak, then a second act married into more of the same (a sequence, by the way, The Macallan has never attempted before at this scale), is what makes this so unusual a bottling in their portfolio of whiskies.
OUR TASTING NOTES:
There's a moment that arrives about thirty seconds in, after the nose has staged its dazzling opening number, teasing you with cocoa and warm spice, where the whisky settles in and becomes almost stately. That’s when the dried fruit notes arrive, as if they were judiciously apportioned, followed by waves of controlled and delicate spice. There’s sweetness here, but it’s a matured sweetness, and one that never veers off into the cloying, thanks to the hints of clove and polished oak that function as guard rails. The finish is beautiful, and, like everything that precedes it, arrives on its own time. It lingers the way a good dinner conversation lingers, past the point when you might otherwise check the time.
THE STORY:
The Macallan has been obsessing over sherry casks for more than two hundred years, but in 2016 that obsession took a pivotal turn, with a foray into ownership. That’s when the distillery built its own cooperage, in Jerez, Spain, and took control of the entire process rather than simply trusting it to outside hands. Acquiring Valdespino was the logical (and slightly audacious) next step. More than just controlling how the casks get seasoned, The Macallan now controls the sherry itself. TIME:SPACE Sherry Cask is the first proof of what that control means for the rest of us. On the evidence: a whole helluva lot. We love this, and can’t wait for all the dazzling developments to come.

FUN FACT:
The presentation box takes its design cues from the palomino grape, which provides the foundation for the sherry that was used to season these superlative casks.
