OUR TASTING NOTES:
Kirsteen Campbell, The Macallan’s Master Whiskymaker, wasn't kidding when she said it captures “the very soul” of Paris. The nose is so evocative of almond croissants and sweet nectarines that you can practically hear the morning bustle of a Left Bank patisserie. Those opening notes fade, giving way to hints of sandalwood and vanilla pods. The palate more than delivers on those initial promises, sending up lusciously rich notes of buttered pastry, brioche, peach melba, and mille-feuille. We’ve never seen The Macallan speak with a French accent like this before, and the wonder of it all is how fabulously well they carry it off. This is a whisky that is almost architectural in its complexity, with each element perfectly positioned a la a Haussman boulevard. The finish is a thing of beauty, long and ideally calibrated.
THE STORY:
Previous installments in the Distil Your World series captured New York, London, Mexico City, and Hong Kong. For this fifth edition, Kirsteen Campbell embarked on an epic culinary journey with the Roca brothers of El Celler de Can Roca, the Michelin 3-star in Girona, Spain, and Anne-Sophie Pic, a gastronomic supernova with 10 Michelin stars to her name. They wandered through perfumeries, explored historic bakeries, and absorbed the city's world-class art museums. Campbell describes the process of rendering those many sensorial impressions into whisky as a “challenging yet beautiful task,” but clearly, the task was not beyond her or the team. You can see clearly that evoking the bread and patisserie culture of Paris was a direct influence on the cask selection in particular, and the project more generally. The result might just be the most culinarily-inspired whisky ever produced.
THE METHOD:
The use of Cognac casks and bourbon barrels is highly unusual for this sherry cask-focused distillery. While traditional European and American sherry-seasoned oak forms the core, as always, the addition of ex-bourbon barrels and Cognac casks has created a new and different affect. Campbell explains: “the selection of casks is essential to crafting layers of flavour. Led by American sherry seasoned casks, with European sherry and ex bourbon, the addition of Cognac casks lends this whisky an unmistakably Parisian accent.”
THE ART:
The presentation case features a "street yellow" hue reflecting the warm glow of Parisian street lamps along the Seine. Paris-based artist Cassandre Montoriol, acclaimed for her distinctive Gouache illustrative style, created an accompanying piece, bringing Parisian scenes to life.
