The Dalmore has just dropped its newest addition to the Principal Collection since 2022, and we’re here to tell you: the wait was worth it.
This 17 Year represents a bold evolution of their exclusive sherry cask trilogy maturation — a process that’s almost as elaborately choreographed as a Broadway musical.
This is a whisky of profound richness and decadence, with aromas — principally, of Seville orange and wood spice — that seem to multiply every time you return your nose to the glass. The palate comes as a surprise after such a focused first act, opening out into something expansive and generous, with notes of poached pear, forest berries, sweet toffee, and orange marmalade. Best of all is that as it keeps on building and building, it keeps shifting and shifting, eluding your best attempts to pin it down. The finish echoes back to the start, with hints of orange and dried fruit, but also, and wonderfully, of chocolate, cinnamon, and nutmeg.
At 42% ABV (84 proof), there's enough strength to carry all these complex flavors without knocking you sideways.

The first aging was done in American white oak ex-Bourbon barrels, which accounts for that hallmark honey-vanilla character, then the liquid, refined and softened, graduated to three different sherry casks for finishing: Amoroso, Matusalem Oloroso, and rare Apostoles, each hand-selected by González Byass, the world-renowned Spanish bodega.
The Apostoles delivers structure and savoury depth, the Amoroso acts as a kind of matchmaker between sweet and savoury, and the Matusalem Oloroso adds weight and a gentle, lingering sweetness.
Each of these casks, by itself, would have made for a great whisky. Together, they add up to something transcendent.
The Dalmore opened for business in 1839, and one of the enduring hallmarks of this Highlands legend is that it never rushes the process, never cuts corners.
