Why Buy: Want to try something you’ve never tasted before? This Bordeaux-style blend from Terre di Talamo was double-aged — first in French barriques, for 16 months, then under sea, for 12 months, making it one of the first underwater cellaring experiments for a still red wine. But excellence, not novelty, is what compels us, and owner Marco Bacci (who delivered a 100-point Brunello, in 2015) has always stood for power and exactitude. This elegant and mature-beyond-its-years wine more than delivers the goods.

 

The Story: It was perhaps inevitable that one day Terre di Talamo would try its hand at underwater aging, given how close its lush and idyllic Maremma vineyards are to the Tuscan coast. But just what does underwater aging do for a wine? According to owner Marco Bacci, who first tested the concept by storing bottles in the bilge of his sailboat, the combination of the constancy of temperature (16 degrees) and the rolling of currents significantly improves the sensory aspects and potentially accelerates the maturation process. To carry out this unique mission, leading experts in maritime culture were brought together, along with several stars of underwater sports, who, aided by a 40-meter pontoon and a Cressi sub, placed nine cages of bottles in the depths of the Talamone Sea.

 

Specs: This Bordeaux-style blend is based on Cabernet Sauvignon, with Cabernet Franc, Merlot, and Syrah for rounding and defining. It was fermented in steel tanks. The estate submerged 9,000 bottles at a depth of 35 meters (nearly 115 feet).

 

Our Tasting Notes: The calling card of Terre di Talamo's wines has long been a pronounced mineral character — no surprise, when you consider the proximity of its terroir to the sea, and that minerality shows up here in welcome and wonderful ways. As for double-aging, it turns out to be far from a gimmick, and has yielded some pretty significant benefits, most notably its alluring and vivid aromatics (redolent of black fruits and wild herbs), its rich, soft texture, and its surprising and persistent finish, which shows no real diminution of fruit, energy, or spice.

 

Fun Fact: In 2020, one of Bacci’s wines was selected as Total Wine's "Wine of the Year."
