As the first whiskey to be distilled in Dublin in nearly half a century, it’s a loving homage to one of the great whiskey makers of old — Dublin Whiskey Distilleries, which built its considerable reputation on single pot still expressions. The mission of DWD was to fashion whiskeys of character and soul — whiskeys that tasted like nothing so much as themselves.
That's the mission, too, of Teeling, and their Master Distiller, Alex Chasko, has crafted a fitting — and incomparably delicious — tribute. The mash bill consists of 50% malted and 50% unmalted barley, which Chasko triple-distilled and matured in a combination of American virgin oak, ex-bourbon, and ex-sherry casks. As always, he opted for non-chill filtering, to allow the natural character of the whiskey to shine through.
The nose is rich and aromatic, sending up notes of bourbon, vanilla, stewed orchard fruits and pot still spices, before giving way to tones of dried herbs and leather. On the palate, you'll revel in its rich creaminess, and the way it unfolds like a journey, teasing with hints of toasted barley, latte, salted caramel, dark fruit, and milk chocolate. The finish brings the chocolate and coffee characteristics more fully into view, and as it lengthens out — and out, and out — it leaves you with warming notes of oak and spice and spearmint.
Just gorgeous craftsmanship, through and through, and a drinking experience of pure pleasure that rewards on multiple levels.
