The Story: Conceived by Ironroot's head distiller Jonathan Likarish and YouTube's "The Liquorhound" host Chris Trevino, this is an inspired marriage, blending as it does a high-rye bourbon from MGP, out of Indiana, with Ironroot's award-winning heirloom corn bourbon, and giving the union two honeymoons, as it were: the first, a maturation in white port casks, the second, a long finish in Cognac casks. The result is not just powerful -- it clocks in at 100 proof -- but is also abundant with the kind of grace notes that connote time, craft, and care.
Our Tasting Notes: A complex bourbon, for sure, but also a bourbon of great balance, with all its many and various components woven into a tight and seamless knit. On the nose, thanks to the port casking, you'll pick up juicy notes of brandied cherries, pears, and white peach tea. The palate echoes those notes, though the experience deepens immeasurably, and you'll find yourself carried along by the richness of creamy vanilla custard and the warm, persistent spice of nutmeg. The finish has the controlled sweetness of a top-notch Riesling, with hints of toasted oak to remind you of its long time spent in barrel.
ABV: 50% (100 proof), and non-chill filtered, with no coloring or flavoring added.
Fun Fact: The name Ironroot is an homage to the legendary viticulturist T.V. Munson, who developed phylloxera-resistant vines – or iron roots, in the wordplay of founding partners (and brothers) Robert and Jonathan Likarish – that helped to save the French wine industry.
