Why Buy: A trio of ultra-rare, knock-your-socks-off delicious, single-cask bottles of Calvados from the cask hunter extraordinaire, PM Spirits, in partnership with the family-owned, 5th-generation Normandy producer, Roger Groult: an 18-year-old aged partly in a Jamaican rhum cask (only 138 bottles produced); a 15-year-old aged partly in an Oloroso sherry cask (only 288); and a 13-year-old aged partly in French Oak (only 366).

The Story: Nicolas Palazzi, the indefatigable founder of PM Spirits, is one of the drivers of the cask hunter movement, and even after all these many years later, he is as dogged as ever in his never-ending pursuit of great and forgotten spirits. Regular readers of this space know that we would follow Palazzi pretty much anywhere he wanted to take us — the man has, quite simply, impeccable taste. But more than that, this self-described "spirit nerd" possesses an unerring ability to create spirits that truly open us up to new worlds.

Specs: The 18-year-old was distilled in 2004 and aged for 13 years in a used Calvados barrel before finishing for another 5 years in a cask that previously held Jamaican rum; the 15-year old, distilled in 2007, aged for 10 years in a used Calvados barrel before finishing for another 5 years in a cask that previously held Oloroso sherry; and the 13-year-old was distilled in 2009, bottled in 2022, and aged for 13 years in French oak.

Our Tasting Notes: Like all PM Spirits releases, you might think you know what you're in for, only to realize at first and second sip: no, no you don't. All three are at once familiar and distinct, and with layers of depth and complexity that you could sit for hours trying to tease out.

ABV: The 18-year-old, 53.5% (107 proof); the 15-year-old, 58.5% (117 proof); the 13-year-old, 50% (100 proof).
