The Oaking: Mizunara is a wood indigenous to Japan, grown in the northernmost tip of the country, and the name is actually a portmanteau: mizu means water; nara, oak. As the translation suggests, the wood is more porous and delicate than its European or American counterparts, and only the most-skilled master coopers can make barrels fit for aging fine whiskey. In the world of spirits, we often talk about long-aging. Well, it takes a different kind of long-aging for mizunara oak to reach full maturity – between 200 and 500 years. Or, to put that another way: somewhere between 3 and 7 lifetimes to produce the vessel that held and aged your bourbon.
About This Limited Edition: Each bottle and box is individually numbered for authenticity. The bottle features an impressive heavy gold cork, while the gift carton box is covered in a soft linen that begs to be held. The signature of founder Zamamian is debossed on the side.
Our Tasting Notes: From our first glimpses of the pour – a mahogany mixed with accents of henna – we knew we were in for something special. The aromatics are fine and developed, with nutmeg, allspice, walnut, and leather speaking first, followed by balancing notes of mint, honey, wood, and orange. The palate is luxuriant, a bourbon so richly smooth that you almost neglect to take notice of the details – among them, the way the conversation, if you will, between the confectionery and the earthy is so equal and so giving. In our notes, we recorded hints of custard, banana, and cinnamon, which fade into dark cherry and a lingering chocolate finish. But it is the hints of tobacco and oak in the background, and the light, almost whispering floral note, that keeps it all from being too powerful or too rich or too sweet. A bravura performance.

Fun Fact: Zamanian was living an entirely different life when he fell in love with the woman who would become his wife, a Louisville native. Call it kismet. Zamanian discovered bourbon, and ended up stepping away from a thriving career as a clinical psychologist and psychoanalyst to start Rabbit Hole.
