Made in a small Jalisco distillery that employs ancient tahonas (wooden crushing wheels), bakes the hand-picked agave in brick ovens, and ferments the juice in wooden vats, this is a blanco with actual complexity, the kind of bottle you'll want to sip neat and contemplate … though should you go the route of lime juice and triple sec, you’ll be very, very happy.
If I might linger just a bit longer on those wooden vats …
They’re the key. Primo Querido ferments the juice with the bagasse (the fibrous agave remnants) still present, adding a depth that many distillers sacrifice in their pursuit of efficiency.
Also crucial here is the double-distillation in copper stills, and the spring water that imparts a distinctive minerality.
On the nose, this is marvelously evocative and nuanced, with notes of citrus, peppermint, pepper, wet earth, flowers, herbs, and, beneath it all, a faint but unmistakable stony character. And the texture: it’s silky rather than aggressive, with a slight warmth in the back and an herbaceous finish that lingers without cloying.
As I alluded to, it will ennoble any margarita, but we’d encourage you to try it neat first, and sit for a bit with that distinct and minerally Los Altos terroir.
