Just like the Wine Enthusiast 97-point Batch 3, this is an estate grown tequila bottled with zero water added, at the exact proof (a walloping 110) it shows when it’s taken from the still. We’re also thrilled to be able to bring you PM’s small-batch, double-distilled Blanco, the product of a single horno (oven), which means each bottle can be traced back to a specific cooking process, offering a unique snapshot of time and terroir with every release. Tequila at its absolute, uncompromised best!

What They're Saying: The New York Times’ Wirecutter extolled the virtues of the Blanco in a lengthy and detailed tasting note: “[We] really liked how … [it] landed on the darker end of the aroma spectrum in a good way, peppered with vegetal notes of dried oregano, black tea, and edamame,” the paper of record noted, going on to praise its “temperament”:  “soft spoken but still palatable, with a medium body and sunbaked green agave flavor.” This is a tequila to “sip,” it concluded, “ especially if you prefer a tequila that's light-bodied with a consistently subtle sweetness and slightly dry finish."

The Bottling: Crafted at NOM 1468 by Grupo Tequilero Mexico, these tequilas are the product of detailed and exacting production. The journey begins with 100% Blue Weber Agave, nurtured for an average of 6 years before harvesting. The piñas are then cooked for 40 hours in a single horno, imparting a unique character to each batch. After cooking, the agave is extracted using a roller mill, preserving the delicate flavors. Fermentation employs a proprietary yeast strain, adding another layer of complexity. The spirit is then twice-distilled in copper pots, a process that ensures purity while retaining the agave's essential oils. In a nod to tradition with a modern twist, the tequila rests for 15 days in bourbon casks. This brief interlude adds subtle depth without overshadowing the agave's intrinsic qualities. The result: a Blanco that whispers of its brief encounter with oak while staying true to its roots. The Still Strength Blanco, bottled at the still, is not simply higher in ABV, but a magnification of this patiently-developed depth and strength.

The Story: More talent scout than traditional  importer, PM Spirits’ founder, Nicolas Palazzi, has built a reputation for discovering rare, aged spirits that set connoisseurs' hearts racing — and primes their palates for the unprecedented. But for this foray into tequila, PM Spirits sought a collaboration as unique as its vision. Enter Jose Luis Gutierrez, who, in his long career, has worked for the Mexican Trade Commission throughout Europe. His passion for tequila is unequaled, and runs as deep as the roots of the agave plants themselves. Having championed the Tequila Denomination of Origin across Europe and worked intimately with producers throughout Jalisco, Gutierrez brought a vast wealth of knowledge and connections to the project. For both partners, provenance, process, and purity were paramount, and their unexpected collab has proven to be as fruitful as it was inspired. You can taste the extraordinary results for yourself.

Our Tasting Notes: To understand what awaits you with the Still Strength, I need to tell you, first, about the Blanco. On the nose, you’ll revel in a complex bouquet that dances between earthy and vegetal notes. The palate unfolds with a gentle caress of sun-warmed agave, accented by hints of white pepper and citrus zest. The finish is clean and slightly dry, leaving a whisper of sweetness that compels you to reach for another sip. Now, let’s talk about the Still Strength. The Still Strength Blanco is the Blanco on steroids, the Blanco made symphonic — brought to greater levels of intensity,power, and resonance. Simply put, it’s like nothing else out there. A unicorn among unicorns.

Fun Fact: The horno, or adobe oven, was introduced to the Iberian peninsula by the Moors, and eventually these ovens became a fixture throughout all Spanish-occupied lands.
