The Meaning of the Certification: To earn the certification "Bottled in Bond," four things must be true. 1. The spirit must be the product of a single distillation season and a single distiller from a single distillery. 2. The spirit must be barreled and stored in bonded warehouses under the U.S. government supervision for no less than 4 years. 3. The spirit must be bottled at precisely 100 proof. 4. Nothing but water may be added after barrel aging, a guarantee for the buyer that the product has not been sweetened or force-aged.
The Story: Like so many brands in the world of wine and spirits, Oregon Spirit Distillers is the product of one man's passion to bring his labor of love to a wider audience. That man is Brad Irwin, who founded the company in 2009, creating Central Oregon's first grain-to-glass whiskey distillery to take advantage of the extraordinary raw materials at his disposal – namely, the great bounty of grains the region has long been renowned for, as well as the pure, crisp water of the Cascade Mountains. As instrumental as that terroir has been to OSD's story, however, the brand would not have become the success that it has without its devoted and detail-minded distilling team, which takes exceptional care in ensuring that each and every bottling is not just excellent, but also distinct.
Our Tasting Notes: The bourbon, aged for a minimum of 4 years, impressed us with its depth and dimension, in particular the quality of its toasting, which imparts complexity to the vanilla undertones. And we loved the way the richness carries through to the finish. The rye, selected from a 12-barrel batch that was aged for 4 years, is a rich and almost decadent expression, with developed flavors of brown butter, roasted almonds, and young, fragrant mint. The wheat whiskey is pure comfort in the glass, a gentle expression that conjures the by-gone spirit of the hearth, with its sense-expanding notes of apple pie, baked bread, and vanilla.
