Fusing the best of artisanal Mexican tequila-making with the best of traditional Mediterranean winemaking, it has crafted an exceptional Añejo Reserva, which aged for a minimum of 12 months in both French oak wine barrels and sherry casks.
The Story: After slow roasting the piñas in traditional volcanic brick ovens in Tequila, Mexico, the aguamiel (a.k.a sweet water) is naturally fermented, then, in the manner of some Scottish single malts, twice-distilled in copper and stainless steel alembic pot stills. The 12-month aging period is followed by a long rest in amphorae, those vessels of yore that enabled the ancient Greeks to build a civilization. The purpose of this resting is also to aerate the spirit, which further softens the tequila. The amphora also – a bonus – imparts a subtle sweetness.
Specs: To honor the pain-staking artisans who came before them, Komos uses only Blue Weber agave, hand-selected from both the highlands and lowlands of the Tequila Valley in Jalisco, Mexico. And it only uses water that has been twice-distilled, to lay a foundation of purity.
Our Tasting Notes: The inspired use of winemaking techniques pays immediate and striking dividends – this is a rich and unusually round expression that comes awfully close to luxuriousness, with hints of dark chocolate, caramel, and cherry that can be traced directly to its sherry casking. You don't have to be a tequila connoisseur to enjoy it, but its complexity, depth, and subtle charm is going to be especially rewarding to someone who collects or who has tasted widely.
Fun Fact: The almost pearlescent white bottle is an homage to the beauty and simplicity of the Mediterranean, and is handmade by artisans.

What to Pair It With: It's best taken neat, or with just a single cube of ice, but it's versatile enough that it can enhance a number of meals. It sings especially with rich or smoky foods, and those foods with good acidity. Think: grilled steaks or chops, smoked trout, ceviches, fondues.
