Islay, known for its peat-influenced single malt whiskies, is home to just nine active Scotch distilleries, including icons Lagavulin and Laphroaig. The smallest and newest distillery—Kilchoman—was founded in 2005 by the Wills family and stands out as Islay’s only farm distillery, with each single malt cultivated from barley to bottle at one single location. Launched to enormous critical acclaim, the family-run Kilchoman is renowned for its attention to detail as well as its small but mighty lineup of annual releases. Since production began, the distillery has been awarded ‘Best in Class’ at prestigious events such as the Whiskies of the World and IWSC competitions as well as Whiskey Advocate’s Islay Single Malt of the Year. Kilchoman’s matured malts are the real deal, with barrels from highly acclaimed producers like Buffalo Trace distillery, and each whisky is prized by enthusiasts around the world. Today we’re featuring the most recent limited-edition small batch release, ‘No. 6’—a U.S.-only bottling that collectors here in the States have been eagerly anticipating. Experimental in nature, the small batch release is the newest of sequential numbered editions that combine specially selected casks, never to be reproduced and worthy trophies for any collection.

Kilchoman is the first distillery to be built on Islay in over 124 years. A farm of 2,000 acres, Kilchoman uses only the most fertile 250 acres surrounding the distillery for growing barley, which is then malted on the property using local peat. With an eye towards quality and history, Kilchoman is one of only seven distilleries in all of Scotland practicing traditional floor malting—the labor-intensive nature of this practice is a significant factor in its demise and rarity. Peat, cut from Islay’s ocean-soaked peat bogs, is used to smoke the germinating barley, adding layers of rich, maritime smoky character to the whisky—the distinct hallmark of the region. After distilling in some of Scotland’s smallest stills, which contributes to a purer spirit, the single malts are matured in a combination of cask types that contribute a unique character and color to balance with Kilchoman’s classic peat smoke and floral sweetness. For ‘No. 6,’ an ex-bourbon barrel and ex-sherry cask were combined with a specially selected Pedro Ximénez sherry cask at natural strength. The result is a wonderful display of citrus, peat, smoke and sea spray with layers of red fruits mixed with spices and cinnamon. At a strength of 47.9%, the whisky changes and develops as the palate acclimates. With just over 1,000 bottles produced, allocations are minuscule.
