There might be no better ‘Exhibit A’ of this narrative of a rising star than Kilchoman, and we couldn't be prouder to see their roaring success.
The first distillery to open on Islay in 124 years, Kilchoman has been on a dramatic upward trajectory since it first arrived in the U.S. in 2010 (it launched in 2005). And it has just had one helluva year. At this year's International Wine & Spirit Competition, judges awarded their Machir Bay 98 points — a jaw-dropping accomplishment for a relative babe in the game.
We brought you that one earlier this year, and your response was so overwhelming that we've partnered with them to bring you their stunning Kilchoman Small Batch Sauternes Finish.
The reason this upstart distiller is even in the conversation of top single malts is that their process — carefully directed by founder and Master Distiller Anthony Willis — is as rigorous, detailed, and conscientious as any of the big boys of long-standing.
To begin with, Kilchoman grows its own barley on site, harvesting, fermenting, and then distilling it to create their "grain-to-glass" whiskies. That distilling is done not once but twice through the distillery's four pot stills (two wash stills and two spirits stills). Aging takes place in both ex-bourbon barrels and Oloroso sherry butts. And there is never any chill filtering and no color added, which means that what you're getting in the glass is as near to a barrel-tasting experience as you can get.
For this one, Willis took the unusual step of also finishing it in a Sauternes cask at natural cask strength. The result is a kind of magic, balancing the caramel and vanilla notes of the bourbon barrels and introducing a textured sweetness that softens some of the citrus and peat for which Kilchoman has become known.
It makes for an incomparably smooth dram, the kind you can sip through the night — ideally by a fire, and with something mellow and melodic in the background.
