Our Tasting Notes: Our recent tasting of the 2022 Pommard Jarolieres 1er Cru and Volnay Pitures 1er Cru from Boillot left us in awe. Simply mesmerizing winemaking. The Pommard boasts a concentrated core of red berry fruit and crushed stones, framed by refined tannins that promise excellent aging potential. The Story: Jean-Marc Boillot's winemaking journey is the stuff of legend. The grandson of the revered Etienne Sauzet, Boillot struck out on his own in 1985, after honing his craft working alongside the legendary Olivier Leflaive. From that point on, he has been a relentless innovator, pushing the boundaries of what's possible in Burgundy. His single-minded focus on fully expressing the unique character of each vineyard site has earned him a reputation as one of the region's most respected and admired producers.
The Specs: Boillot's meticulous attention to detail is evident in every aspect of his winemaking. He employs gentle pneumatic pressing to extract the purest, most delicate juice, and vinifies each parcel separately, using judicious amounts of new French oak (20-30% for village wines, up to 40% for premiers crus, and 50% for grand crus). This thoughtful approach allows the wines to showcase their inherent terroir with remarkable clarity and precision.
