The result is this delicious, high-octane beaut: an 11 Year Old Single Cask that matured in an ex-bourbon cask and finished in an Oloroso Puncheon for 36-42 months, and that clocks in at over 126 proof.

Specs: Distilled in 2011, this GlenAllachie 2011 11 Year Old Single Cask tastes like nothing else Walker, a 2021 inductee into the Icons of Whisky Hall of Fame, has done. But in another respect, it is no different from any of the countless single malts he has made over the years, in being a passion project of the highest order. What do you get, when you get a Billy Walker single malt? Consummate artistry. Walker is deft in his use of casking to deepen and amplify a single malt without ever losing sight of its soul. And his 50+ years experience in the industry have endowed him with an unerring palate.
Our Tasting Notes: What Walker has done is to take the classic GlenAllachie butterscotch profile, and amp up the richness many times over. That note of butterscotch is there at the beginning, along with chocolate-covered raisins, caramelized sugar, molasses, and baking spices. On the palate, we find richness layered upon richness, as dark chocolate gives way to brown sugar, which gives way to mocha, which gives way, on the wonderfully long finish, to plum jam, orange zest, and cinnamon.
ABV: 63.2% (126.4 proof), with no color added and non-chill filtered.
