The Story: Just over two decades ago, Giorgio Meletti Cavallari launched his eponymous winery in the wake of the sale of Grattamacco, his father's estate and just the second to open in Bolgheri. He has quite literally put his stamp on these wines: each bottle bears an embossed, red thumbprint. It's what's in the bottle, however, that excites collectors around the world: the realization, vintage after vintage, of a winery that operates with some of the soul of a garagiste, minding the tiniest of details, limiting yields, and eschewing any trace of corporatization. 

 

The Specs: The percentages of the Impronte, made with grapes from the highest elevation vineyard site in the appellation, vary slightly from year to year, but Cabernet Sauvignon is approximately 70% of the blend, with the rest Cabernet Franc. In the two Bolgheri Rossos, Merlot is dominant (50% of the blend, with Cabernet Sauvignon (35%) and Syrah making up the remainder

Fun Fact: The name Bolgheri can be traced to a geographical map made by Leonardo da Vinci in the 15th century.

 

What to Pair Them With: The Improntes will elevate any roasted or grilled meat – as well as any charcuterie or cheese board. The Bolgheri Rossos are beautifully suited to ragus, pizzas, and stews, but are among the rare reds that can work, too, with some seafood and fish.
