The Story: The arrival of the talented and visionary Nicole Austin as GM and distiller has been a boon to this historic house, nestled in the rolling hills of Cascade Hollow, in tiny Tullahoma, Tennessee. Among her innovations was to introduce a bourbon to the lineup of craft ryes and Tennessee whiskeys, and the response around the world has been nothing short of overwhelming. The bourbon "uses the same mash bill," wrote the Robb Report, "the same yeast, and even undergoes the same Lincoln County filtration process as Dickel's Tennessee whiskey." Why, then, call it a bourbon and not a whiskey? Austin based her decision entirely on flavor — on the rich, roundedness of the final expression, a result, in large part, of the barrels she selected for aging.

Our Tasting Notes: There are bourbons and then there are long-aged bourbons. And even among the long-aged bourbons there are differences. This one delivers more than just richness and mellowed smoothness. The nose itself is almost worth the price tag, with notes so complex as to send your mind in many directions, yet so subtle that no one element dominates. It's much the same on the palate, as you're borne along a smooth, seamless road to the finish, with all the many different characteristics that make up this exquisite expression knitted into a harmonious whole. Drink it neat or with a single cube of ice, and it will reward you with a deep and delicious respite from the cares of the world.
