THE BACKGROUND: That year of aging, by the way, is only just the beginning of what makes this tequila special, and a prize for any collection. The master tequilero, Felipe Camarena, has separated himself from his contemporaries in Jalisco by employing, in the words of The International Tequila Academy, "unique (and mind-blowing) processes" that challenge everything you think you know about the category: he distills with harvested rainwater instead of processed water, creates stone ovens that cook agave with perfect evenness, and strips the insides of the agave plant to remove bitterness. The great irony, of course, is that all these innovations should have produced, in this gorgeous slow sipper, something time-honored, ancient, and pure.

OUR TASTING NOTES: That year in George Dickel barrels was time well spent, believe me. The first nosing is an experience all its own, and will lead you to a second and a third, at least. The aromatics are vibrant and alive, with cooked agave and black pepper leading the charge, followed by waves of vanilla, cinnamon, and butterscotch that hint at the serious barrel work that’s behind this. Threading through everything is a whisper of smoke, subtle but unmistakable, along with a hint of minerality that serves to ground the sweetness. On the palate, balance is the watchword: caramel and dark chocolate open the show, before yielding the stage to note of warm oak, baking spice, tobacco, and leather. G4's signature spring and rainwater are unmissable, lending the experience a natural brightness and even elegance. A beautifully crafted bottling.

THE STORY: In the world of tequila, where tradition often battles innovation, Felipe Camarena represents something rare. This third-generation producer one day up and decided the family way wasn't good enough. So he quit the family business, built his own distillery from scratch at El Pandillo, and began crafting tequila with processes that seemed impossible until he proved that somehow they worked. Camarena combines an engineering background with an artist's obsession for perfection, honoring traditions like copper stills and stone ovens, but departing from the methods of the past when he has hit upon a better technique or process. And his work is focused entirely, and indeed, obsessively, on the quality of the tequila only, not on branding or marketing. As he puts it: "I'm not in the business of making fancy bottles. I'm in the business of making great tequila." 

SERVING SUGGESTIONS: Enjoy neat or with a drop of water to open up those barrel influences. A chicken in mole negro is an obvious great pairing, of course, but anything with dark chocolate — a chocolate lava cake, for instance — is going to show beautifully in its company. 

FUN FACT: How obsessed is Camarena with re-imagining how tequila is made? To eliminate bitterness, he literally removes the "male parts" (the inner core) of each agave plant before cooking it, a laborious process that most distillers would consider ludicrous, but which plays a not-inconsiderable part in the pure, clean taste of G4’s tequilas.
