The Droins have been crafting Chablis from Kimmeridgian limestone since the 1600s, creating that knife-edge minerality that makes every other "Chablis-style" wine look like a pale imitation. Droin still hand-harvests their premier sites, and they ferment with indigenous yeasts and use just enough oak to frame, but never cover, that piercing limestone voice. The result: Chablis that actually tastes like Chablis — crystalline, mineral-driven, bracingly pure.
Lignier operates from the aristocratic heart of Côte de Nuits, where Laurent continues his father's obsessive methods across Morey-Saint-Denis, Gevrey-Chambertin, and Chambolle-Musigny. The approach is about as purist as it gets: organic viticulture, open-top fermentation, gravity-flow everything, zero shortcuts.
