WHY BUY: The Macallan rarely lets independent bottlers get their hands on its casks, let alone put its name and an age statement on the label, which makes this an ultra-rarity: a single cask distilled in 1993 (purists prize this richer, more oily era from the famed distiller), aged 33 years, and bottled by Duncan Taylor without blending to preserve its authentic character. And once this one’s gone, there won't be another like it.
OUR TASTING NOTES: Three decades in wood means a lot of whisky lost, as they say, to the angels, and you can really taste what that evaporation has wrought in this bottling: what remains is denser, rounder, and more fully itself. The color is mahogany edging toward gold, and the nose expresses itself in waves: fruitcake and dark cherries first, then raisins and prunes, then cinnamon and clove, and, finally, and marvelously, a twist of orange peel. The sherry is undeniably here on the palate, but the effect is more lively than heavy, and the texture is rich and coating, a la a warm honey. We loved the way the whisky trades lines as it goes, spice asserting and receding, sweetness coming forward and then almost, but not quite, fading, as the finish takes you home.
ABV: 44.8% (89.6 proof).
WHAT TO PAIR IT WITH: For a whisky as grand as this, the only proper pairing is a comfy chair and total quiet.
FUN FACT: Whisky aging in Scotland loses roughly two percent of its volume to evaporation each year. This is the so-called "angel's share." Over 33 years, that's a lot of very happy angels, and, for the rest of us, a much more concentrated cask.
