One of the enduring appeals of Burgundy is that nothing ever changes. You can rest assured, in other words, that when you pour a Grand Cru or Premier Cru, you are pouring something very, very close to what your great grandfather might have poured. And what his great grandfather might have poured. And so on and so forth, going back centuries.
But alas, change did come to Burgundy, in the form, two years ago, of 22 newly declared Premier Crus in Pouily Fuissé.
The designation simply affirms what many of us have known for a long time now, which is that the wines of this region are as consistent as they are excellent.
And perhaps no house in that region has demonstrated more consistent excellence than Domaine Trouillet, a small boutique estate in the Mâconnais that has long been a critical darling in the wine press. We were thrilled to have secured a small allocation of the three of their PF 1er Crus, all from 2020 — the PF 1er Cru Chailloux, the PF 1er Cru Jules, the PF 1er Cru Pouilly — along with their 2020 Pouilly Fuissé and their 2021 Mâcon Solutré.

Located at the foot of the famous Rock of Solutré, in the hamlet of Pouilly, the Trouillet estate is currently in the expert hands of William, a young, fifth-generation winemaker. Beyond continuity and the inherited knowledge that comes with that, the estate is blessed with old vines (most are forty to fifty years old), rich, layered clay-limestone soils, and a philosophical approach that embraces sustainability and limits yields.
All of this shows up in the glass. These are meticulously crafted wines, with subtle depth and vibrant minerality. And what is surprising, and delightful, is that, for all their complexity, they have an easy-to-drink sippability.
As with many white Burgundies, you'd have to look long and hard to find better wines for food, particularly when it comes to fish, shellfish, risotto, and cheese boards. The difference, here, is that there is enough oomph in the glass to be more than just a palate cleanser, and enough character and depth to carry you through a meal.
