The Story: For decades, Mercurey and Rully have been among the most famous appellations of the Côte Chalonnaise, historic cradle of Burgundy wines. Founded in 2016, the Domaine de la Bressande covers over 50 acres of prime vineyards spread over these two emblematic villages. The Domaine comprises 10 individual single vineyard plots of which half are classed as Premier Cru. Plot selection, yield control, sustainable farming and quality monitoring from vine to glass all contribute to a philosophy of responsible and sustainable viticulture. Bressande employs gentle, temperature-controlled fermentation to preserve the vibrant fruit and delicate aromatics of each parcel. Judicious use of oak (20-30% new for village wines, up to 40% for premiers crus) allows the wines to develop subtle complexity while maintaining their crystalline purity of expression. 

What to Pair Them With: The 2020 Mercurey Rouge is a dynamic dance partner for grilled salmon, roasted pork tenderloin, or a charcuterie board. The more structured 2022 1er Cru calls for a hearty beef bourguignon, an earthy mushroom or truffle risotto, or aged hard cheeses.
