Diplomático Distillery is located in the Planas Valley at the foot of the Andes mountains and is surrounded by a vast number of sugar cane fields. The exceptional natural environment of the Terepaima National Park, located near the distillery, is ideal for cultivating premium rum—from sugar cane production to barrel ageing—as it has favorable climate conditions such as warm days, cool nights, and high humidity, as well as pure water and fertile soils. Established in 1959, the distillery has been privately owned since 2002 and has become one of the most prized rum producers in the country. Following the strict guidelines of the ‘Ron de Venezuela’ DOC (which forbids the use of artificial color, flavor, or aroma and requires a minimum two-year maturation in white oak barrels), Diplomático combines traditional and modern distillation techniques using both sugar cane molasses and sugar cane honeys. The three distillation processes include the use of a Barbet column still (a continuous distillation system originally from France), a batch kettle still (a hybrid system comprised of a batch distillation drum and connected column still) and a traditional pot still—all three methods contribute to a plethora of styles showcased in the Diplomático portfolio, ranging from lighter rums to more complex styles.
