Chopin is one of the few vodka producers in the world that owns a distillery and produces 100% of its alcohol from raw, hand-selected ingredients. The Polish distillery dates back to the 18th century and the priceless copper column still has given life to their spectacular spirits for more than 125 years. Using estate-grown, carefully selected varieties of potatoes and grains from rich, dark soils, Chopin has easily vaulted to the upper echelon of premium vodka, upending the idea that vodka is just a neutral spirit. Yet owner Tad Dorda was not satisfied: he wanted to take Chopin to even greater heights and keep pace with the global trend for artisanal, singular expressions.
Working with Master Distiller Waldemar Durakiewicz, Dorda sought out an exceptional variety of potato for more than a decade. In 2016, they found one. The potatoes were harvested in the peak of summer when they were still young and their skins ever so tender, and only pure water and yeast were added before quadruple distillation in their copper still. Young potatoes are characterized by their low starch content and sweeter flavors, and it requires nearly four times the quantity to produce the same amount of spirit. Resting in 50-year-old oak casks for two years, the vodka mellowed while maintaining its full flavor before being bottled by hand.
Whereas most vodkas are made to be pristine and clean, this is without a doubt the most flavorful vodka I have ever tasted. Although not a brown spirit, the experience of sipping this neat or on the rocks is much closer to a Scotch or fine tequila, and it can take any cocktail, even the classic martini, to the next level. With spice on the nose, the vodka is refined and complex, full and round on the palate, and balanced by flavors of licorice and earthy sweetness. This will no doubt stand out on anyone's bar.
