There’s a common misconception that famed Benedictine monk Dom Pérignon invented the sparkling wine we know today as Champagne. Ironically, much of Dom Pérignon’s time was spent trying to determine how to keep the bubbles out of the wine, which was seen as a common flaw in 17th century Champagne wines. This bubbly “flaw” soon became not only desired, but the unique signature of Champagne wines. It didn’t take long for the world to fall in love with this effervescence, and Champagne eventually became the official beverage of choice for nobility and to commemorate important occasions. Of course, to this day Champagne remains the world’s official celebratory beverage, though many sommeliers and wine enthusiasts also sing its praises for food pairings and collectibility, especially the coveted vintage-dated cuvées.
