Her passion, artistry, and exactitude has energized Ayala, founded more than 180 years ago, and turned it into one of the most exciting stories in Champagne today.
This gorgeous Blanc de Blancs is a glittering example of her craft. In a 94-point rave, Wine Spectator called it "mouthwatering," while Robert Parker hailed it as "generous and enveloping." We are privileged to be able to bring it to you—and at a remarkable price, to boot.
Produced in small quantities, but only in exceptional years – 2014 happens to have been a superb one for Chardonnay from the Côte de Blancs—it's made with 100% Chardonnay grapes sourced exclusively from the finest Crus of the Côte des Blancs and aged in the Art Deco cellars at Ayala.
It takes all of a second for it to make a stunning first impression, all but leaping from the glass like a frisky deer. On the broad palate, its mousse is accented with bits of honey-drenched pastry and warm brioche. This is a medium- to full-bodied wine, fleshy and rich, but it's sprightly, too, with an incisiveness that gives shape and definition to the voluptuousness. The finish is long and deep, and, characteristic of the Côte de Blancs, you'll find a welcome touch of minerality, along with hints of grapefruit, blood orange, and marcona almonds.
Ideal as an aperitif, it's also a sneakily good dance partner for seafood—with, say, a shrimp risotto or a lobster bisque.
With a couple years in the cellar, its complexity and texture reveals itself more fully—without, however, losing even a little of its liveliness and charm.
