What all the gushing over mezcal in recent years tends to obscure is that there are some spectacular tequilas out there right now, made with exquisite artisanal care and employing methods that reach back centuries.

A good number of bottlings are finally finding their way from Mexico into the States, and we just got our hands on two that we love—both from the estimable Gran Cava de Oro, which recently took home a prestigious Double Gold at the San Francisco World Spirits Competition.

The Extra Aged Añejo is made from 100% Blue Weber agave harvested from the Los Altos and Tequila Valley regions of Jalisco. After cooking in brick ovens at the famed Tequilera Puerta de Hierro Distillery, and under the direction of Master Distiller Alberto Partida, the agave is pressed with a roller mill, fermented in stainless steel tanks and double-distilled in traditional pot stills.

To be considered "extra añejo," the tequila must be aged a minimum of three years; this one is aged for five years, and in French white oak barrels, giving the spirit a surprising richness and roundness, as well as a smoky complexity akin to Cognac or bourbon.

On the nose, the barrel influence is unmistakable, with notes of caramel, oak, charred wood, and nutmeg wafting up from the glass. The first sip reveals a tequila of exceptional smoothness, opening to a mid-palate that is unexpectedly round and even, dare we say it, creamy. The finish? Long and smooth, thanks to the natural sweetness produced by the agave and the extra aging.

If the Extra Aged Añejo is the perfect end to a long, lingering dinner, the Cristalino with its floral notes and clean finish is a great way to ease into it.

Take an Añejo and run it through a charcoal filtration process that removes the amber color and— voila! you have the Cristalino: a clear, almost crystalline tequila with all the depth and richness of an Añejo, but with the bright crispness of a blanco.

It also happens to make for a pretty mean margarita, one that—trust us—will wow you and your friends with its depth.
