To understand what makes this new limited-edition release from Bunnahabhain so great, so memorable, so singular — and folks, we only have a small allocation, and only for residents of three states — we have to take a moment to talk about parallel aging.
The classic method of cask finishing is a wonderfully delicate art, but it usually involves introducing a mature bourbon-aged malt to a wine cask for three to six months.
Bunnahabhain has gone bigger and bolder for its 10-year Aonadh (pronounced "oon-ouch”).
Back in 2011, the distillery took the chance of splitting their raw spirit to mature in parallel for a full, undisturbed decade. Half of it went into dark ex-sherry casks, the other half into lush ex-port pipes. Leaving a spirit to finish in wood for that long, we don't have to tell you, is highly unorthodox: the oak tends to devour the distillery character entirely, leaving you with little more than, well, alcohol without character, without flavor.
But Bunnahabhain had an instinct.
And man oh man has it ever had a payoff.
This is a gloriously rich, intense, and absolutely unrepeatable dram. There's an extraordinary push-pull as you sip, between, on the one hand, a deep, nutty sherry dryness and, on the other, the explosive, dark-fruit sweetness that comes from the port cask. What keeps it braided and tight is that oily, salt-flecked character that Bunnahabhain has made its signature.
The nose is its own feast, serving up notes of rich, creamy vanilla and brandy butter and caramel, along with a hint of dark berries and a whisper of oak. On the palate, the meeting of the two casks has resulted in something extraordinarily complex, with sweet red and black fruit from the port side squaring off against cinnamon spice and roasted nuts from the sherry, with just a flicker of salinity at the edges. The finish is long and unhurried, floral and lightly sweet, and with an almost savory chili chocolate spice to send you home.
It’s no surprise that Bunnahabhain would have come up with an experiment as daring as this one.
It’s always been the odd one out on an island obsessed with smoke. While many of its neighbors have put peat front and center, Bunnahabhain has taken the opposite tack, and embraced balance, elegance, and restraint.
Founded, in 1881, on Islay's northeastern coast, the distillery draws its water from the Margadale Spring, the only source on the island untouched by peat, and runs it through the tallest stills on Islay, which naturally softens and refines the spirit before it ever lands in cask. Wooden washbacks stretch fermentation out to a gob-smacking 54 hours, and then the whisky matures in warehouses right on Bunnahabhain Bay, where the cool, salt-heavy air seeps in and does the rest.
It has never gone in for chill-filtering, or for added color. It has taken no shortcuts, ever, in its nearly century-and-a-half of existence.
Aonadh, by the way, means “union” in Gaelic.
And it's a testament to Bunnahabhain’s painstaking craft and sensitivity that this single malt that could have gone off the rails, could have tasted strange and incongruous, is so beautifully integrated, and smooth, and right.
