It takes their signature profile — traditional floor malting, below-sea-level maturation, that smouldering Islay smoke — and sets it against complex sherry aging, both in barrel and on the finish; the smoke doesn't disappear so much as step back gracefully, allowing the sherry's richness to come forward in revelatory and wonderful ways. Worth noting: sherry casks account for only 8% of all the casks maturing at Bowmore, making this collection as rare as it is compelling.
WHAT THEY'RE SAYING:
Whisky Advocate spotlighted the collection at launch, paying special attention to master blender Calum Fraser's layered approach: the way he finished the 18 and 21 Year expressions first in Oloroso casks, then Pedro Ximénez, and built complexity from the ground up. Drinkhacker, reviewing the 12 and 15 Year, praised the "characteristic pairing of peat and sweet" and singled out the 15 for its "noticeable salinity" and remarkable depth. Beyond the critics: Bowmore already ranks as the 2nd most collectible Scotch whisky in the world, and this collection only burnishes that reputation.
OUR TASTING NOTES:
15 Year Old (43% ABV): Darker and more brooding. Corinth raisins and sweet dates emerge first, followed by cocoa beans and a whisper of dark chocolate close behind. The palate brings cedarwood, treacle toffee, and clove spice, with a finish the distillery describes, perfectly, as "contented."
18 Year Old (43% ABV): The nose opens with rich dark chocolate, date oil, orange zest, and fresh pineapple, and all of this grounded by a peatiness that gives the whole thing ballast and purpose. Bittersweet orange peel and moist sultanas appear on the long, complex finish. Wonderfully fruity, yes, but also wonderfully serious.
21 Year Old (46.8% ABV): Complex and evocative, with notes of tobacco, heather, warming ginger, tanned leather, treacle, red berries, and — startlingly — barbecued meat. For all its intensity and depth, it’s also completely harmonious, with a finish of sweet woods and gentle smoke that refuses to leave.
THE STORY:
The distillery's fabled No. 1 Vaults, the oldest registered maturation warehouse in the UK, sit below sea level, where the damp, cool, salt-laden air does its patient, transformative work on every cask. Twenty-five percent of all the malted barley used to make Bowmore is still malted by hand on the distillery's own malt floors, and turned every four hours for five to seven days; a practice that most of the industry abandoned long ago in the name of efficiency. Well, Bowmore never got that memo, and the result is a whisky that exudes depth and ages (as the distillery proudly notes) like no other single malt. Sherry casks, it turns out, have been part of this story from nearly the beginning: they were the house style during the celebrated Morrison Bowmore era of the 1950s and '60s, and it was a sherry-matured Bowmore — the legendary Black Bowmore of 1964 — that first announced to the world just how extraordinary this pairing could be. In 1994, Suntory took full ownership, bringing new resources to a house that had needed only a fresh infusion of money to show its worth to a new generation.

Each bottle in the Sherry Oak Cask Collection features Bowmore's new sea dragon icon, a nod to the local legend of Kranna Dubh, a shape-shifting sea dragon said to inhabit the waters of Loch Indaal. In a quietly poetic touch, this new version of the sea dragon faces forward rather than back … a literal look toward the future.
