The Story: To produce this, the third installment in his renowned Master Blender series, Black Tot's Oliver Chilton reached deep into his cellar of historical rums, drawing inspiration from the rums that British sailors drank in the days of rum-rationing. "These rums, since lost in the rum world," Chilton writes, "were rich with notes of baked banana, dusty chocolate, mocha milkshakes, honey, tobacco, leather, liquorice, and spice. These flavors were mapped out and became our guide."
The Specs: The Guyanese, Barbardian and Jamaican rums were pot- and column-distilled; the Trinidadian, column-distilled only. The Perpetual Blend was aged for 9 months in refill sherry butts.
Our Tasting Notes: They don't get more full-flavored and intense than this. You'll revel in the exceedingly rich, complex palate, with its notes of caramel, bananas, raisins, chocolate, and baking spices. The finish sustains these flavors all the way to the end, while also revealing glimmers along the way of cocoa, coffee and pepper.
ABV: 54.5% (109 proof), non-chill filtered, and with no added sugar.
Fun Fact: The rum was conceived as an homage to Black Tot Day, which marked the end of rum rationing by the British Royal Navy.
