During their tenure, founders Nicolas François Billecart and Élisabeth Salmon built the estate into one of the most respected names in the region. One of the portfolio’s crown jewels, ‘Cuvée Élisabeth’ was introduced as a tribute to the founder in 1988. The wine is composed of an equal blend of Pinot Noir—sourced from top sites within the Montagne de Reims and the Grande Vallée de la Marne—and Chardonnay from the Côtes des Blancs. The wine is the palest of pinks, coming from the addition of around 10% still red Pinot Noir from old vines in ‘Valofroy,’ a parcel within Mareuil-sur-Aÿ. The wine aged in the cellar sur lie for nearly a decade before being disgorged, and perfectly weaves a rich profile of spice, minerality, and red fruit with a freshness that’s impressively lively after more than a decade of age. 

 

‘Cuvée Louis’ was introduced to honor Louis Salmon, Élisabeth’s brother, who was an integral member of the enology team during the maison’s early days. The 2007 Blanc de Blancs is 100% Chardonnay, sourced from Côtes des Blancs Grand Cru sites Chouilly, Mesnil-sur-Oger, and Cramant. The energy and finesse of this wine will stop you in your tracks and suggest a long life ahead: the floral and stone fruit aromas leap from the glass, and the fine perlage lends a rich textural component on the palate. 

 

‘Sous Bois’ is an equal blend of Grand and Premier Cru Pinot Noir, Chardonnay, and Pinot Meunier that was vinified exclusively in oak. The oak vinification process has bestowed a tremendous richness and spicy nuance to the wine, but the wood’s role here is more textural in nature. (That is, don’t expect an overwhelming oaky flavor.) It’s velvety and balanced, with notes of citrus, nectarine, brioche, and toffee. ‘Sous Bois’ and the top 2007 cuvées are distinct styles, but all have been expertly crafted and aged into collectible indulgences.
