Our Tasting Notes: The nose immediately tells you you’re in for something good — baked apples and graham cracker in the foreground, with roasted nuts providing the bassline and cinnamon and black pepper adding spicy high notes. The Method: Two Times Oak isn't just a clever name — it's a pioneering process where every expression gets additional oak exposure, something no other brand does across their entire lineup. Dixon works with two distinct Kentucky Straight Bourbon mash bills — one moderate rye at 18% and one high rye at 35%. The magic happens when he double-barrels the 6-plus-year-old high rye bourbon into new charred oak barrels with both #3 and #4 char levels. This gives him four distinct components to work with: low rye bourbon, high rye bourbon, and two different char-level double-barreled high rye bourbons.
