These are luxuriantly smooth, in the Highland manner, loaded with sweet spice and nutty complexity from their long, long stints in sherry casks, and boasting the kind of grace notes that only a revered master can bring.

To drill down a bit further …

The 21 Year opens almost blithely, a light, refreshing nose of lemon and vanilla, before building into something more interesting and layered and nuanced, as lime and gentle spice come forward on the palate, followed by notes of ripe, dried fruits. The orange-toned finish lingers like the last notes of an old jazz standard. 

The 25 Year is a deeper, weightier expression. On the nose, malty fresh cookies and rich, vanilla custard aromas give way to oak, berries, cinnamon, and chocolate, with a pronounced sherry finish that manages (blessedly) to be elegantly spicy rather than cloying. 

In both, what is front and center is the extended maturation in hand-selected Jerez sherry casks that each was given, lengthening and developing the lines of expression.

You notice the craftsmanship here the same way you notice the details in a perfectly tailored suit.
